Seth Berkowitz was a student at the University of Pennsylvania when he founded Insomnia Cookies in 2003. He began his business in his dorm room, baking and distributing cookies to fellow students craving late-night snacks.

What began as a small operation rapidly became a full-fledged business with commercial kitchens and delivery drivers, where he catered to college students and night owls. Insomnia Cookies became a successful business by Berkowitz focusing on this niche and expanding to campuses nationwide.
